1 cup orzo pasta

150g nduja (soft spicy spreadable sausage)

1 medium onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 zucchini, diced

2 cups vegetable broth

1 can (400g) diced tomatoes

1 teaspoon smoked paprika

½ teaspoon red chili flakes (adjust to taste)

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese for serving (optional)

Instructions
 

Cook the Orzo: In a large pot of boiling salted water, add the orzo and cook according to package instructions until al dente. Drain and set aside.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing for 2-3 minutes until the onions are translucent.

      Add Nduja: Stir in the nduja, breaking it apart with a wooden spoon as it melts into the oil. Cook for an additional minute to let the flavors deepen.

        Incorporate Veggies: Add the diced bell pepper and zucchini to the skillet. Cook for 4-5 minutes, until the vegetables are slightly softened.

          Combine Ingredients: Pour in the diced tomatoes (with juices), vegetable broth, smoked paprika, and red chili flakes. Stir until well combined and let the mixture simmer for about 10 minutes.

            Mix in Orzo: Once the sauce has thickened, add the cooked orzo to the skillet. Toss everything together until the orzo is fully incorporated and coated in the sauce. Season with salt and pepper to taste.

              Serve: Remove from heat and let it sit for a couple of minutes. Serve warm, garnished with fresh basil leaves and a sprinkle of grated Parmesan cheese if desired.
