Ingredients

500g fresh mushrooms (cremini, button, or a mix), sliced

1 medium onion, finely chopped

2 cloves garlic, minced

3 cups vegetable broth

1 medium carrot, diced

2 tablespoons olive oil

1 tablespoon soy sauce (or tamari for gluten-free)

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Juice of 1/2 lemon

Instructions

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1 minute, stirring frequently to avoid burning.

Cook the Mushrooms: Stir in the sliced mushrooms and diced carrots. Cook for about 5-7 minutes, stirring occasionally, until the mushrooms have softened and released their moisture.

Add Broth and Seasonings: Pour in the vegetable broth and add soy sauce, dried thyme, dried rosemary, salt, and pepper. Bring to a boil, then reduce the heat to a simmer.

Simmer the Soup: Let the soup simmer for about 15-20 minutes, uncovered. This helps to concentrate the flavors.

Blend for Creaminess (optional): If you prefer a smoother texture, use an immersion blender to blend the soup until desired consistency is reached. Alternatively, you can carefully transfer half of the soup to a blender, blend, and then mix it back into the pot.

Finish and Serve: Add the lemon juice and adjust seasoning if necessary. Serve the soup hot, garnished with fresh parsley. Enjoy your delicious, creamy-tasting mushroom soup without any cream!
