8 oz (225g) fettuccine or pasta of your choice

2 tablespoons olive oil

3 cups fresh mushrooms, sliced (button, cremini, or a mix)

3 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

Zest of 1 lemon

Additional Parmesan for serving

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Mushrooms: In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and cook for about 5-7 minutes, until they are golden brown and tender.

      Add Garlic: Stir in the minced garlic, salt, black pepper, and red pepper flakes (if using). Cook for an additional 1-2 minutes until fragrant.

        Make the Cream Sauce: Reduce the heat to low and pour in the heavy cream, stirring to combine with the mushrooms. Let it simmer for about 3 minutes, allowing the sauce to thicken slightly.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing to coat it in the creamy mushroom sauce. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.

            Finish with Cheese and Lemon: Stir in the grated Parmesan cheese and lemon zest, mixing well until the cheese melts and everything is combined.
