4 boneless, skinless chicken thighs

1 cup long-grain rice

2 ½ cups chicken broth

1 large onion, thinly sliced

4 cloves garlic, minced

1 cup heavy cream

1 teaspoon smoked paprika

½ teaspoon thyme

½ teaspoon black pepper

1 teaspoon salt (or to taste)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Season the chicken thighs with salt, black pepper, and smoked paprika. Set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the sliced onion and cook for 5-7 minutes until translucent. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

      Brown the Chicken: Push the onions and garlic to the side of the skillet and add the seasoned chicken thighs. Brown them on each side for about 4-5 minutes, until they develop a golden crust. Remove the chicken from the skillet and set aside.

        Cook the Rice: In the same skillet, add the rice and stir it gently with the onions and garlic. Toast the rice for about 2 minutes.

          Combine Ingredients: Pour in the chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.

            Return Chicken to Pan: Once the mixture starts simmering, nestle the browned chicken thighs back into the skillet, making sure they’re mostly submerged in the liquid.

              Simmer: Cover the skillet with a lid, reduce the heat to low, and let simmer for 25-30 minutes or until the rice is cooked through and has absorbed most of the liquid. Stir occasionally to prevent sticking.
