For the Cupcakes:

1 ¾ cups all-purpose flour

2 cups granulated sugar

¾ cup unsweetened cocoa powder

1 ½ teaspoons baking powder

1 teaspoon baking soda

½ teaspoon salt

2 large eggs

1 cup buttermilk

½ cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water

For the Coconut-Pecan Frosting:

1 cup granulated sugar

½ cup evaporated milk

½ cup unsalted butter

1 teaspoon vanilla extract

1 ½ cups sweetened shredded coconut

1 cup chopped pecans

3 large egg yolks

For Decoration:

Additional pecans, toasted (optional)

Chocolate ganache (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin pan with cupcake liners.

    Make the Cupcake Batter: In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well. In another bowl, whisk together the eggs, buttermilk, vegetable oil, and vanilla extract until combined. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Slowly stir in the boiling water until the batter is smooth (batter will be thin).

      Bake the Cupcakes: Pour the batter into the prepared cupcake liners, filling each about ¾ full. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven and allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

        Prepare the Frosting: In a medium saucepan over medium heat, combine the sugar, evaporated milk, butter, and egg yolks. Cook, stirring constantly, until the mixture thickens, about 10 minutes. Remove from heat and stir in the vanilla, coconut, and pecans. Allow it to cool for about 30 minutes until slightly thickened.

          Frost the Cupcakes: Once the cupcakes are completely cooled, generously top each cupcake with the coconut-pecan frosting.

            Decorate (Optional): For an extra touch, drizzle some chocolate ganache over the frosting and sprinkle with toasted pecans.
