Ingredients
  

1 lb flank steak, thinly sliced against the grain

2 tablespoons cornstarch

2 tablespoons vegetable oil

3 cloves garlic, minced

1 inch ginger, freshly grated

1/4 cup soy sauce (preferably low sodium)

1/4 cup brown sugar

1/2 cup green onions, chopped (white and green parts separated)

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 tablespoon sriracha (optional for spice)

Sesame seeds for garnish

Instructions
 

Prep the Beef:

    - In a bowl, toss the sliced flank steak with cornstarch until evenly coated. Allow it to marinate for about 15 minutes while you prepare the other ingredients.

      Make the Sauce:

        - In a small bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, and sriracha (if using). Set aside.

          Cook the Beef:

            - Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef in batches (do not overcrowd the pan) and sear for about 2-3 minutes on each side until browned and cooked through. Remove the beef and set aside.

              Sauté Aromatics:

                - In the same skillet, add a little more oil if necessary, and sauté the minced garlic and grated ginger for about 30 seconds, until fragrant.

                  Combine:

                    - Return the cooked beef to the skillet and pour the sauce over it. Stir well to combine, letting the sauce coat the beef evenly.

                      Add Green Onions:

                        - Add the white parts of the green onions and sauté for another minute. Remove from heat, and finish with the green parts of the onions.

                          Serve:

                            - Transfer to a serving dish, garnish with sesame seeds and additional green onion tops. Serve hot over steamed rice or noodles.
