Ingredients

4 bone-in, skin-on chicken thighs

1/2 cup unsalted butter, melted

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon Dijon mustard

1 tablespoon honey

Salt and pepper, to taste

1 lemon, sliced

Fresh parsley, for garnish

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Marinade: In a bowl, whisk together the melted butter, minced garlic, rosemary, thyme, Dijon mustard, honey, salt, and pepper until well combined.

Marinate the Chicken: Place the chicken thighs in a baking dish and pour the butter mixture evenly over them, ensuring they are well coated.

Add Lemon: Arrange lemon slices on top of the chicken for added flavor and moisture.

Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the chicken is golden brown and the internal temperature reaches 165°F (75°C).

Rest: Remove from the oven and let the chicken rest for about 5 minutes before serving.

Garnish and Serve: Garnish with freshly chopped parsley and drizzle some of the pan juices over the chicken before serving.
