1 cup (200g) semi-sweet chocolate chips

1/2 cup (115g) unsalted butter

1 cup (200g) granulated sugar

2 large eggs

1 teaspoon pure vanilla extract

1/2 cup (65g) all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

1/2 cup (90g) dark chocolate chunks (for the lava filling)

Powdered sugar (optional, for dusting)

Instructions
 

Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.

    In a medium saucepan over low heat, melt the semi-sweet chocolate chips and unsalted butter together, stirring frequently until smooth. Remove from heat and let cool slightly.

      In a large mixing bowl, whisk together the granulated sugar, eggs, and vanilla extract until well combined.

        Gradually pour the melted chocolate mixture into the sugar and egg mixture, whisking continuously until fully incorporated.

          Sift the all-purpose flour, salt, and baking powder into the chocolate mixture, folding gently until just combined. Do not overmix.

            Fold in the dark chocolate chunks, ensuring they are evenly distributed throughout the dough.

              Using a tablespoon, scoop out dough and roll into balls. Place them on the prepared baking sheet, spaced about 2 inches apart.

                Use your thumb or the back of a teaspoon to make a shallow indentation in the center of each dough ball. Fill the indentation with a chunk of dark chocolate, then cover the filling with some additional dough, making sure it is sealed.

                  Bake in the preheated oven for 10-12 minutes, or until the edges are firm but the centers are still slightly soft for that molten effect.

                    Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

                      If desired, dust with powdered sugar before serving.
