Ingredients

1 ¾ cups all-purpose flour

2 cups granulated sugar

¾ cup unsweetened cocoa powder

1 ½ teaspoons baking powder

1 ½ teaspoons baking soda

1 teaspoon salt

2 large eggs

1 cup whole milk

½ cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water

½ cup sour cream

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Combine Dry Ingredients: In a large mixing bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Mix Wet Ingredients: In another bowl, beat the eggs. Add milk, oil, and vanilla extract, and mix until well combined.

Blend Together: Gradually add the wet mixture to the dry ingredients, mixing on medium speed until smooth and well incorporated. The batter will be thick.

Add Boiling Water: Carefully stir in the boiling water. This will thin out the batter, making it easier to pour. Mix until fully combined.

Incorporate Sour Cream: Fold in the sour cream gently until no lumps remain.

Pour and Bake: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Cool the Cakes: Once baked, remove the pans from the oven and let them cool in the pans for about 10 minutes. Then remove from pans and transfer to a wire rack to cool completely.

Frosting and Assembly: Once cooled, frost with your favorite chocolate frosting and stack the layers. Decorate as desired with chocolate shavings or fresh berries.
