1 ½ cups of glutinous rice flour (mochi flour)

½ cup of granulated sugar

½ teaspoon of baking powder

1 large egg

½ cup of milk (or dairy-free alternative)

2 tablespoons of melted butter (or coconut oil for a vegan option)

1 teaspoon of vanilla extract

½ teaspoon of salt

Oil for frying (vegetable or canola)

Optional toppings: powdered sugar, matcha powder, chocolate glaze, sprinkles, or toasted coconut

Instructions
 

Prepare the Dough: In a large mixing bowl, combine glutinous rice flour, sugar, baking powder, and salt. Whisk together until well combined.

    Mix Wet Ingredients: In a separate bowl, whisk the egg, then add milk, melted butter, and vanilla extract. Mix until fully incorporated.

      Combine Mixtures: Gradually pour the wet ingredients into the dry mixture, stirring until a thick batter forms. Make sure there are no lumps.
