Ingredients
  

2 pounds baby potatoes, washed and halved

1/4 cup butter, melted

1 tablespoon olive oil

1/4 cup sour cream

1/4 cup cream cheese, softened

1/4 cup shredded cheddar cheese

1/4 cup cooked and crumbled bacon

2 tablespoons chopped chives

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large bowl, mix together the melted butter, olive oil, garlic powder, smoked paprika, salt, and pepper.

      Add the halved baby potatoes to the bowl and toss until they are evenly coated with the butter mixture.

        Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.

          Roast the potatoes in the oven for about 25-30 minutes, or until they are golden brown and tender when pierced with a fork.

            While the potatoes are roasting, prepare the creamy mixture: In a separate bowl, combine sour cream, cream cheese, shredded cheddar, crumbled bacon, and chopped chives. Mix until smooth and well blended.

              Once the potatoes are done, remove them from the oven and let them cool for a few minutes.

                Transfer the roasted potatoes to a serving dish and dollop the creamy mixture on top.

                  Garnish with additional chives and a sprinkle of smoked paprika, if desired.
