Mini Strawberry Crunch Cheesecake Bites

Ingredients
  

1 cup crushed graham crackers

1/4 cup unsalted butter, melted

2 tablespoons sugar

8 oz cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

1 cup whipped cream or whipped topping

1 cup fresh strawberries, diced

1/2 teaspoon lemon juice

Optional: additional strawberry slices and mint leaves for garnish

Instructions
 

Prepare the Crust: In a medium bowl, combine crushed graham crackers, melted butter, and sugar. Mix until well combined and the mixture resembles wet sand.

    Form the Crust: Line a mini muffin pan with mini cupcake liners. Press about 1 tablespoon of the graham cracker mixture into the bottom of each liner to form the crust. Use the back of a spoon or your fingers to pack it tightly. Chill in the refrigerator for 15 minutes.

      Make the Cheesecake Filling: In a large bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Gently fold in the whipped cream until fully combined.

        Prepare the Strawberries: In a separate bowl, toss the diced strawberries with lemon juice. This helps to enhance their flavor and keeps them fresh.

          Assemble the Cheesecake Bites: Once the crust has set, spoon the cheesecake filling into each mini crust, filling it to the top. Add a layer of the diced strawberries on top of the cheesecake filling.

            Add Crunch: Sprinkle any remaining graham cracker mixture on top of each cheesecake bite for a crunchy finish.

              Chill and Serve: Refrigerate the assembled cheesecake bites for at least 2 hours to allow them to firm up. Optionally, top with additional strawberry slices and mint leaves before serving.
