8 small baby potatoes

1 cup shredded cheddar cheese

1/2 cup crispy bacon bits

1/4 cup sour cream

1/4 cup green onions, finely chopped

Olive oil

Salt and pepper, to taste

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: Wash the baby potatoes thoroughly and dry them. Poke a few holes in each potato using a fork to allow steam to escape.

      Roast the Potatoes: Drizzle the potatoes with olive oil, sprinkle with salt, pepper, garlic powder, and paprika. Place them on a baking sheet and roast in the oven for about 25-30 minutes or until fork-tender.

        Slice and Scoop: Allow the potatoes to cool slightly. Once cool enough to handle, slice each potato in half lengthwise. Carefully scoop out a portion of the flesh, leaving a small border around the skin to create a shell.

          Fill the Skins: In a mixing bowl, combine the cheddar cheese and crispy bacon bits. Fill each scooped potato skin with the cheese and bacon mixture.

            Bake Again: Return the filled potato skins to the baking sheet, and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

              Garnish: Remove from the oven and let cool for a few minutes. Drizzle sour cream on top and sprinkle with chopped green onions before serving.
