1 cup crushed graham crackers

1/4 cup granulated sugar

1/3 cup unsalted butter, melted

16 oz cream cheese, softened

3/4 cup creamy peanut butter

1 cup powdered sugar

1 teaspoon vanilla extract

1/4 cup heavy cream

12 mini peanut butter cups, coarsely chopped

1/4 cup chocolate chips (for drizzling)

Instructions
 

Prepare the Crust: In a medium bowl, combine the crushed graham crackers, granulated sugar, and melted butter. Mix until well combined. Press about 1 tablespoon of the mixture into the bottom of each muffin cup in a silicone or paper muffin tin. Use the back of a spoon to pack it down tightly. Set aside.

    Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy using an electric mixer. Add the creamy peanut butter, powdered sugar, and vanilla extract, and continue to mix until everything is well blended.

      Add the Heavy Cream: Slowly drizzle in the heavy cream while continuing to mix until the filling is light and fluffy.

        Fold in the Peanut Butter Cups: Gently fold in the chopped mini peanut butter cups into the cheesecake mixture using a spatula.

          Fill the Cups: Spoon the cheesecake filling over the prepared crust in the muffin tin, filling each about three-quarters full. Smooth the tops with a spatula.

            Chill: Cover the muffin tin with plastic wrap or foil and place in the refrigerator. Chill for at least 4 hours, or overnight if possible, to allow the cheesecakes to set properly.

              Prepare for Serving: Once set, remove the cheesecakes from the muffin tin. If desired, melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth. Drizzle the melted chocolate over the top of each cheesecake for an extra indulgent touch.

                Serve and Enjoy: Place the cheesecakes on a serving platter or individual plates. Garnish with remaining mini peanut butter cups if desired. Enjoy these delicious mini treats!
