2 medium apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/3 cup granulated sugar

1/2 cup milk

1 large egg

1 teaspoon vanilla extract

Oil for frying (such as vegetable or canola oil)

Powdered sugar for dusting

Prepare the Apples: Begin by dicing the peeled and cored apples into small pieces. Set them aside in a bowl and sprinkle a tablespoon of sugar and a dash of cinnamon over them. Toss to coat and allow to sit for a few minutes.

    Mix Dry Ingredients: In a large mixing bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, salt, and the remaining sugar. Whisk together until well combined.

      Combine Wet Ingredients: In a separate bowl, whisk together the milk, egg, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry mixture, stirring gently until just combined. Do not overmix; it’s okay if there are a few lumps. Fold in the diced apples until they are evenly distributed in the batter.

          Heat the Oil: In a deep pan or fryer, pour enough oil to submerge the fritter bites (about 2-3 inches deep). Heat the oil over medium heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter in; it should sizzle and rise to the surface.

            Fry the Fritters: Once the oil is hot, drop tablespoon-sized spoonfuls of batter into the oil, being careful not to overcrowd the pan. Fry in batches for about 2-3 minutes on each side or until they are golden brown.

              Drain and Dust: Use a slotted spoon to remove the fritter bites from the oil and place them on a plate lined with paper towels to drain excess oil. While they are still warm, dust them generously with powdered sugar.

                Serve and Enjoy: Serve your mini apple fritter bites warm. They are best enjoyed fresh but can be stored in an airtight container for a day or two. Optionally, you can serve them with a side of caramel sauce for dipping.
