1 lb ground beef or turkey

1 medium onion, chopped

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning

8 small corn tortillas

2 cups shredded cheddar cheese

1 cup salsa

1 cup sour cream

1 cup diced bell peppers (red, yellow, or green)

Fresh cilantro, chopped (for garnish)

1 avocado, diced (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Meat: In a large skillet over medium heat, add the ground beef or turkey. Cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.

      Add Vegetables: Add chopped onions and minced garlic to the skillet, and sauté until onions are translucent, about 3-4 minutes.

        Mix Ingredients: Stir in the black beans, corn, diced tomatoes (with their juice), and taco seasoning. Let it simmer for about 5 minutes, then remove from heat.

          Layer the Casserole: Spread a thin layer of salsa at the bottom of a 9x13 inch baking dish. Then, place 4 corn tortillas on top of the salsa, slightly overlapping them.

            Add Filling: Spoon half of the meat mixture over the tortillas, spreading it evenly. Sprinkle with 1 cup of shredded cheddar cheese, then add half of the diced bell peppers.

              Repeat Layers: Add another layer of 4 corn tortillas on top, followed by the remaining meat mixture, salsa, and the remaining bell peppers. Top with another cup of cheddar cheese.

                Final Topping: Add the final layer of tortillas on top, then spread sour cream evenly across the surface. Finally, sprinkle the remaining cheese on top.

                  Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and slightly golden.
