1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

1 tsp ground cumin

1 tsp chili powder

1/2 tsp paprika

Salt and pepper to taste

8 small corn tortillas

2 cups shredded Mexican blend cheese

1 cup enchilada sauce (store-bought or homemade)

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, about 5-7 minutes. Drain any excess fat.

      Add Vegetables: Add the chopped onion and minced garlic to the skillet. Sauté for about 3 minutes until the onion becomes translucent.

        Season the Filling: Stir in the black beans, diced tomatoes (with juices), cumin, chili powder, paprika, salt, and pepper. Cook for an additional 5 minutes, allowing the flavors to meld. Remove from heat.

          Prepare the Tortillas: In a separate skillet, lightly heat the corn tortillas to make them pliable (about 20-30 seconds per side).

            Assemble the Enchiladas: Spoon a generous amount of the beef mixture into each tortilla, roll them up tightly, and place seam-side down in a lightly greased baking dish.

              Add Sauce and Cheese: Pour the enchilada sauce evenly over the rolled tortillas, then sprinkle the shredded cheese on top.

                Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

                  Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro and serve with sour cream on the side.
