Ingredients
  

2 whole branzino (about 1-1.5 lbs each), cleaned and scaled

1 large lemon, thinly sliced

4 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh dill, chopped

1/4 cup fresh oregano, chopped

1/4 cup olive oil

Salt and pepper to taste

1/2 cup cherry tomatoes, halved

Fresh arugula for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Fish: Rinse the branzino under cold water and pat them dry with paper towels. Make 3 diagonal slashes on each side of the fish to allow the flavors to penetrate.

      Make the Herb Mixture: In a bowl, combine the minced garlic, chopped parsley, dill, and oregano. Add salt, pepper, and olive oil, mixing well to create a marinade.

        Season the Fish: Rub the herb mixture generously inside the cavity and over the surface of the branzino. Place a few lemon slices inside each fish.

          Arrange in Baking Dish: Lay the branzino in a large baking dish. Surround the fish with the halved cherry tomatoes and any extra lemon slices you have.

            Bake: Drizzle a bit more olive oil over the fish and vegetables, then cover the baking dish with aluminum foil. Bake in the preheated oven for 25-30 minutes, or until the fish is cooked through and flakes easily with a fork.

              Serve: Remove the fish from the oven and let it sit for a couple of minutes. Serve the branzino on a platter, garnished with fresh arugula if desired. Enjoy it with a drizzle of olive oil and a squeeze of fresh lemon juice.
