1 lb ground beef (preferably 80/20 for juiciness)

1/2 lb ground pork

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup finely diced onion

1/2 cup finely diced bell pepper (red or green)

2 cloves garlic, minced

2 large eggs

1/4 cup milk

1/4 cup ketchup (plus extra for topping)

2 tbsp Worcestershire sauce

1 tsp dried thyme

1 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

1/4 tsp red pepper flakes (optional for a kick)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Ingredients: In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, diced onion, diced bell pepper, and minced garlic.

      Mix Wet Ingredients: In a separate bowl, whisk together the eggs, milk, ketchup, Worcestershire sauce, thyme, smoked paprika, salt, black pepper, and red pepper flakes until well combined.

        Combine Mixtures: Pour the wet mixture into the meat mixture. With clean hands, mix everything thoroughly until well combined. Be careful not to overmix as this can make the meatloaf tough.

          Shape the Meatloaf: Transfer the meat mixture into a loaf pan, shaping it into a loaf. If you prefer, you can form it into a free-form loaf on a baking sheet lined with parchment paper.

            Top with Ketchup: Spread the additional ketchup over the top of the meatloaf for a flavorful glaze.

              Bake the Meatloaf: Place the loaf in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 160°F (70°C) and the meatloaf is cooked through.

                Rest and Serve: Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This helps retain the juices. Garnish with fresh parsley before serving.
