1 package (9 ounces) cheese tortellini

1 tablespoon olive oil

2 cloves garlic, minced

1 shallot, finely chopped

1 cup cherry tomatoes, halved

1 cup baby spinach

1 teaspoon dried Italian herbs (basil, oregano, thyme)

1/2 teaspoon red pepper flakes (adjust for spice level)

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Cook the Tortellini: In a large pot of boiling salted water, cook the cheese tortellini according to package instructions until al dente. Drain and set aside, reserving a little pasta water.

    Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add minced garlic and chopped shallot, sautéing for about 2 minutes until fragrant.

      Add Cherry Tomatoes: Stir in the halved cherry tomatoes and cook for another 3-4 minutes until they start to soften.

        Incorporate Greens: Add baby spinach to the skillet and cook until wilted, about 2 minutes.

          Make the Sauce: Pour in the heavy cream and stir well to combine. Add the dried Italian herbs, red pepper flakes, and season with salt and pepper. Let the sauce simmer for about 5 minutes until slightly thickened.

            Combine: Add the cooked tortellini to the sauce, tossing gently to coat. If the sauce is too thick, add a splash of reserved pasta water to loosen it.
