12 oz cheese tortellini (fresh or frozen)

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach, fresh

1 cup heavy cream

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional)

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Cook the Tortellini: In a large pot of salted boiling water, cook the tortellini according to package instructions. Drain and set aside.

    Sauté the Aromatics: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

      Add the Veggies: Stir in the halved cherry tomatoes and fresh spinach, cooking until the tomatoes begin to soften and the spinach wilts, about 3-4 minutes.
