8 oz fettuccine or linguine pasta

1 lb large shrimp, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup cherry tomatoes, halved

1 cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon lemon zest

2 tablespoons fresh lemon juice

Salt and black pepper to taste

¼ cup fresh basil leaves, chopped, for garnish

Optional: Additional grated Parmesan for serving

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine or linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Shrimp: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the shrimp, season with salt and black pepper, and cook for about 2-3 minutes on each side until pink and opaque. Remove shrimp from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the remaining tablespoon of olive oil. Sauté the minced garlic and red pepper flakes for about 30 seconds, until fragrant. Then, add the halved cherry tomatoes and cook for about 3-4 minutes until they start to soften.

        Add Cream and Cheese: Pour in the heavy cream, stirring to combine. Bring the mixture to a gentle simmer, then add the grated Parmesan cheese, stirring until melted and the sauce thickens. Adjust seasoning with salt and pepper as needed.
