2 chicken breasts, sliced into bite-sized pieces

8 oz fettuccine or penne pasta

1 cup sun-dried tomatoes, chopped

3 cups baby spinach

1 cup heavy cream

1 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon red pepper flakes (adjust to taste)

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil for garnish

Cook the pasta: In a large pot, bring salted water to a boil. Add the fettuccine (or penne) and cook according to package directions until al dente. Drain and set aside, reserving about 1 cup of the pasta water.

    Sauté the chicken: In a large skillet, heat olive oil over medium heat. Season the chicken pieces with salt and pepper. Add them to the skillet and cook until they are no longer pink in the center and golden on the outside, about 5-7 minutes. Remove chicken from the skillet and set aside.

      Prepare the sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Then add the sun-dried tomatoes and dried oregano, cooking for another 1-2 minutes.

        Add cream and cheese: Pour in the heavy cream, red pepper flakes, and half of the Parmesan cheese. Stir well and let it simmer for 3-4 minutes, allowing the sauce to thicken slightly.

          Combine the ingredients: Add the cooked chicken back into the skillet, along with the baby spinach. Stir until the spinach wilts. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

            Combine with pasta: Toss the cooked pasta into the sauce and mix well, ensuring every piece is coated. Adjust seasoning with more salt and pepper if needed.

              Serve: Plate the pasta and sprinkle the remaining Parmesan cheese on top. Garnish with fresh basil leaves for added flavor and color.
