2 boneless, skinless chicken breasts

8 oz fettuccine pasta

2 tbsp olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup grated Parmesan cheese

1/2 cup sun-dried tomatoes, chopped

1 tsp dried Italian herbs (oregano, basil, thyme)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Red pepper flakes (optional, for heat)

Instructions
 

Cook the pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Prepare the chicken: While the pasta cooks, season the chicken breasts with salt and pepper. In a large skillet over medium-high heat, heat the olive oil. Add the chicken breasts and cook for about 6-7 minutes on each side or until cooked through and golden brown. Remove from the skillet and let it rest before slicing.

      Create the sauce: In the same skillet, add minced garlic and cook for about 1 minute until fragrant. Then, add the halved cherry tomatoes and sun-dried tomatoes. Sauté for about 2-3 minutes until the tomatoes soften.

        Make it creamy: Pour in the heavy cream, stirring to combine. Reduce heat to low and add in the grated Parmesan cheese, dried herbs, salt, and pepper. Stir until the cheese melts and creamy consistency forms. If the sauce is too thick, gradually mix in the reserved pasta water until you reach the desired creaminess.

          Combine: Add the cooked fettuccine into the skillet with the sauce, gently tossing to coat the pasta evenly. Slice the chicken breasts and arrange them on top of the pasta.

            Garnish and serve: Finish with a sprinkle of fresh basil leaves and red pepper flakes if using. Serve immediately, preferably with extra Parmesan cheese on the side.
