Ingredients

1 pound boneless skinless chicken thighs

1 tablespoon olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup chicken broth

1 cup orzo pasta

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

Fresh basil, for garnish

Instructions

In a large skillet over medium-high heat, heat the olive oil. Season the chicken thighs with salt, pepper, oregano, thyme, and paprika.

Add the chicken thighs to the pan and cook for about 4-5 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.

Add the halved cherry tomatoes and sauté for another 2-3 minutes until they begin to soften.

Pour in the chicken broth and bring to a simmer. Stir in the orzo pasta and cook according to package instructions (about 8-10 minutes), stirring occasionally.

Once the orzo is cooked and most of the liquid has absorbed, return the chicken to the skillet.

Stir in the heavy cream and grated Parmesan cheese until well combined.

Cook for an additional 2-3 minutes until everything is heated through. Adjust seasoning with more salt and pepper as needed.

Garnish with fresh basil before serving.
