1.5 lbs pork tenderloin

1/4 cup maple syrup

1/4 cup Dijon mustard

2 tablespoons olive oil

2 garlic cloves, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon apple cider vinegar

1/2 teaspoon red pepper flakes (optional, for a kick)

Fresh parsley for garnish (optional)

Instructions
 

Marinate the Pork: In a mixing bowl, whisk together the maple syrup, Dijon mustard, olive oil, minced garlic, thyme, salt, pepper, apple cider vinegar, and red pepper flakes. Place the pork tenderloin in a resealable plastic bag or a shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 1 hour, or preferably overnight for deeper flavor.

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Sear the Pork: Heat a large, oven-safe skillet over medium-high heat. Remove the pork from the marinade (reserve the marinade), and sear it in the skillet for about 3-4 minutes on each side until it is nicely browned.

        Bake the Tenderloin: Once seared, pour the reserved marinade over the pork. Transfer the skillet to the oven and bake for about 25-30 minutes, or until the internal temperature reaches 145°F (63°C).

          Rest the Meat: Remove the skillet from the oven and let the pork rest for 5-10 minutes. This helps to lock in the juices.

            Slice and Serve: Slice the pork tenderloin into medallions and drizzle some of the pan sauce over it. Garnish with fresh parsley if desired. Serve with your favorite sides, like roasted vegetables or mashed potatoes.
