Ingredients
  

4 medium sweet potatoes, peeled and cubed

3 tablespoons olive oil

3 tablespoons pure maple syrup

1 teaspoon chipotle powder

1 teaspoon smoked paprika

1/2 teaspoon cinnamon

Salt and pepper to taste

2 tablespoons chopped fresh cilantro (for garnish)

Optional: 1/4 cup chopped pecans for added crunch

Instructions
 

Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.

    In a large bowl, combine the olive oil, maple syrup, chipotle powder, smoked paprika, cinnamon, salt, and pepper. Whisk until smooth to create a marinade.

      Add the cubed sweet potatoes to the bowl and toss until each piece is thoroughly coated with the marinade.

        Spread the sweet potatoes in a single layer on the prepared baking sheet.

          Roast in the preheated oven for 25-30 minutes or until the sweet potatoes are tender and lightly caramelized, flipping halfway through for even cooking.

            If using, add the chopped pecans during the last 10 minutes of roasting for extra crunch.

              Once done, remove the sweet potatoes from the oven and allow to cool slightly before transferring to a serving dish.

                Garnish with freshly chopped cilantro for a pop of color and flavor.
