Maple Bourbon Glazed Ham

1 fully cooked bone-in ham (about 8-10 pounds)

1 cup pure maple syrup

½ cup apple cider vinegar

¼ cup brown sugar

2 tablespoons Dijon mustard

1 tablespoon Worcestershire sauce

1 teaspoon ground cinnamon

½ teaspoon ground ginger

½ teaspoon black pepper

¼ teaspoon ground cloves

Fresh rosemary sprigs for garnish

Instructions
 

Preheat your oven to 325°F (160°C) and prepare a roasting pan by lining it with aluminum foil for easy cleanup.

    Remove the ham from its packaging and place it in the roasting pan, fat side up. If the ham has a thick rind, score it in a diamond pattern with a sharp knife to allow the glaze to penetrate.

      In a medium saucepan, combine the maple syrup, apple cider vinegar, brown sugar, Dijon mustard, Worcestershire sauce, ground cinnamon, ground ginger, black pepper, and ground cloves. Heat Over medium heat until the mixture starts to boil, then reduce the heat and let it simmer for about 5 minutes, stirring occasionally until the sugar is dissolved and the glaze has slightly thickened.

        Brush half of the glaze over the surface of the ham, making sure to cover the scored areas. Reserve the remaining glaze for later.

          Tent the ham loosely with aluminum foil and place it in the oven. Bake for approximately 1.5 hours, basting every 30 minutes with the remaining glaze. Remove the foil during the last 20 minutes of baking to allow the glaze to caramelize and develop a nice crust.

            Once the ham is heated through and you see a golden-brown exterior, remove it from the oven and let it rest for at least 15 minutes before slicing.

              Garnish with fresh rosemary sprigs before serving for a beautiful presentation.
