Ingredients

1 pre-made graham cracker pie crust

1 can (14 oz) sweetened condensed milk

1/2 cup fresh lemon juice (about 2-3 lemons)

Zest of 1 lemon

3 large egg whites

1/4 teaspoon cream of tartar

3/4 cup granulated sugar

Whipped cream, for serving

Lemon slices and mint leaves for garnish (optional)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C).

Prepare Filling: In a medium mixing bowl, combine the sweetened condensed milk, fresh lemon juice, and lemon zest. Whisk together until smooth and well combined.

Make Meringue: In a separate large mixing bowl, beat the egg whites with an electric mixer on medium speed until frothy. Add the cream of tartar and continue beating until soft peaks form. Gradually add the granulated sugar, about 1 tablespoon at a time, while continuing to beat until stiff peaks form and the meringue is glossy.

Combine: Gently fold the lemon mixture into the meringue with a spatula, being careful not to deflate the egg whites.

Fill Crust: Pour the combined filling into the pre-made graham cracker pie crust, smoothing the top with a spatula.

Bake: Bake the pie in the preheated oven for 10-12 minutes, or until the meringue is lightly golden on top.

Cool: Remove from the oven and allow the pie to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours before serving.

Serve: Once chilled, slice the pie and serve with a dollop of whipped cream, garnished with lemon slices and mint leaves if desired. Enjoy the magic of this refreshing dessert!
