Ingredients

1 lb large shrimp, peeled and deveined

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust to taste)

1/4 teaspoon black pepper

2 large eggs

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

Cooking spray or olive oil for greasing

Instructions

Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Prepare Shrimp: Rinse the shrimp under cold water and pat them dry with paper towels. This helps the coating stick better.

Make Coating: In a shallow bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, paprika, cayenne pepper, and black pepper. Mix well and set aside.

Prepare Egg Mixture: In another shallow bowl, whisk together the eggs, Dijon mustard, and lemon juice until smooth.

Coat Shrimp: Dip each shrimp first into the egg mixture, allowing any excess to drip off, then coat it thoroughly in the panko mixture. Press the breadcrumbs onto the shrimp lightly to ensure an even coating.

Arrange on Baking Sheet: Place the coated shrimp in a single layer on the prepared baking sheet. Spray lightly with cooking spray or drizzle with a bit of olive oil for extra crispiness.

Bake: Bake in the preheated oven for about 12-15 minutes, or until the shrimp are pink, opaque, and the coating is golden and crispy.

Serve: Remove from the oven and let cool for a minute. Serve with your favorite dipping sauce and a wedge of lemon for a burst of freshness. Enjoy this magic crispy delight!
