1 lb fresh lobster meat, chopped

2 cups all-purpose flour

2 large eggs

1 tbsp olive oil

1/2 tsp salt

1 cup ricotta cheese

1/4 cup grated Parmesan cheese

1 tbsp fresh chives, chopped

Zest of 1 lemon

1/2 cup unsalted butter

2 cloves garlic, minced

Juice of 1 lemon

Salt and pepper to taste

Fresh parsley, for garnish

Extra Parmesan cheese, for serving

Instructions
 

Make the Pasta Dough: In a large bowl, mix flour and salt. Create a well in the center and add the eggs and olive oil. Gradually mix until a dough forms. Knead on a floured surface until smooth, about 5-7 minutes. Wrap in plastic wrap and let rest for 30 minutes.

    Prepare the Filling: In another bowl, combine the chopped lobster meat, ricotta cheese, grated Parmesan, chives, and lemon zest. Mix well and season with salt and pepper.

      Roll Out the Dough: After resting, divide the pasta dough into four pieces. Roll each piece into thin sheets using a pasta machine or rolling pin, dusting with flour to prevent sticking.

        Assemble the Ravioli: Place a teaspoon of the lobster filling on one half of the pasta sheet, spacing them about 2 inches apart. Moisten the edges with water, fold the other half over, and seal well by pressing out any air. Cut into squares or circles using a pasta cutter or knife.

          Cook the Ravioli: Bring a large pot of salted water to a boil. Carefully drop in the ravioli and cook for 3-4 minutes or until they float to the surface. Gently remove with a slotted spoon and set aside.
