1 lb ground beef (80/20)

1 medium onion, diced

2 cloves garlic, minced

1 medium zucchini, diced

1 cup cauliflower florets, blanched

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup sour cream

1/2 cup beef broth

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

    Cook the Ground Beef: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 5 minutes. Add the ground beef and cook until browned, breaking it apart with a spatula. Season with salt, pepper, Italian seasoning, and paprika.

      Add Vegetables: Stir in the diced zucchini and blanched cauliflower florets, cooking for an additional 3-4 minutes until the veggies start to soften.

        Mix in the Creamy Base: In a separate bowl, combine the sour cream and beef broth until well mixed. Pour this mixture over the beef and vegetable mixture in the skillet, stirring until fully combined.
