1 cup of cauliflower rice

1 tablespoon olive oil

½ teaspoon garlic powder

½ teaspoon Italian seasoning

½ cup bell peppers, diced (any color)

½ cup mushrooms, sliced

½ cup cooked chicken or turkey, shredded (optional)

½ cup marinara sauce (sugar-free for lower carbs)

1 cup shredded mozzarella cheese

¼ cup black olives, sliced

Fresh basil leaves for garnish

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Cauliflower Rice: In a large mixing bowl, combine the cauliflower rice, olive oil, garlic powder, Italian seasoning, salt, and pepper. Mix well until the cauliflower is evenly coated.

      Sauté Vegetables: In a skillet over medium heat, sauté the bell peppers and mushrooms for about 5 minutes until they are slightly softened. If using chicken or turkey, add it to the skillet and heat through.

        Assemble the Bowl: In an oven-safe bowl or baking dish, spread the seasoned cauliflower rice evenly as the base. Layer the sautéed vegetables and meat (if using) on top of the rice. Pour marinara sauce over the mixture and spread evenly.

          Add Cheese and Olives: Top the pizza bowl with shredded mozzarella cheese and sliced black olives.

            Bake: Place the bowl in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.

              Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
