8 oz whole wheat fettuccine or pasta of choice

1 lb boneless, skinless chicken breast, diced

1 cup cauliflower florets

1 cup low-sodium chicken broth

1 cup unsweetened almond milk or low-fat milk

1 tablespoon olive oil

3 cloves garlic, minced

½ teaspoon onion powder

½ teaspoon Italian seasoning

¼ teaspoon salt (or to taste)

¼ teaspoon black pepper

¼ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Cauliflower Cream: In a saucepan, add cauliflower florets and cover with water. Bring to a boil and simmer until tender (about 10 minutes). Drain, then blend the cauliflower with chicken broth and almond milk until smooth. Set aside.

      Cook the Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken, garlic, onion powder, Italian seasoning, salt, and pepper. Cook for 6-7 minutes, or until the chicken is fully cooked and browned.

        Combine Ingredients: Once the chicken is cooked, reduce heat to low and pour the blended cauliflower cream into the skillet. Stir well to combine and heat through.

          Add Pasta and Cheese: Toss in the cooked fettuccine and mix until the pasta is well-coated with the creamy sauce. Gradually add in the Parmesan cheese, stirring until melted and incorporated.
