1 lb beef sirloin or tenderloin, thinly sliced

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz mushrooms, sliced (cremini or button mushrooms)

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 tablespoon all-purpose flour

1 cup sour cream

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

12 oz egg noodles or your preferred pasta

1 tablespoon butter

Cook the Noodles: In a large pot of salted boiling water, cook the egg noodles according to package directions until al dente. Drain and set aside. Toss with a bit of butter to prevent sticking.

    Sauté the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the thinly sliced beef in a single layer, seasoning with salt and pepper. Sear for about 2-3 minutes on each side until browned and cooked through. Remove the beef from the skillet and set it aside.

      Sauté Onions and Mushrooms: In the same skillet, reduce heat to medium and add the chopped onion. Sauté for 3-4 minutes until softened. Add the minced garlic and sliced mushrooms, cooking for another 5-7 minutes until the mushrooms are tender and golden.

        Make the Sauce: Sprinkle the flour over the mushroom mixture and stir for 1-2 minutes. Gradually whisk in the beef broth, Worcestershire sauce, and Dijon mustard. Allow the mixture to simmer for 5 minutes, until it thickens slightly.

          Combine Beef and Sour Cream: Lower the heat and stir in the sour cream until fully combined. Return the beef to the skillet, cooking for an additional 2 minutes to warm through. Adjust seasoning with salt and pepper as needed.
