Ingredients
  

For the Ravioli:

1 pound fresh or frozen lobster meat, chopped

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1 tablespoon fresh parsley, chopped

1 tablespoon lemon zest

Salt and pepper, to taste

1 package fresh pasta sheets (or homemade pasta)

For the Zesty Lemon Butter Sauce:

1/2 cup unsalted butter

3 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

Juice of 1 large lemon

1/4 cup fresh parsley, chopped

Salt and pepper, to taste

Instructions
 

Prepare the Lobster Filling:

    - In a mixing bowl, combine the chopped lobster meat, ricotta cheese, Parmesan cheese, fresh parsley, lemon zest, salt, and pepper. Mix until well combined. Set aside.

      Make the Ravioli:

        - Roll out the pasta sheets on a lightly floured surface to about 1/16-inch thickness.

          - Place small mounds (about 1 tablespoon) of the lobster filling along one half of the pasta sheet, leaving a 1-inch space between each mound.

            - Fold the other half of the pasta sheet over the filling to create a pocket. Press down around the filling to seal, making sure to eliminate any air bubbles. Cut out ravioli using a pasta cutter or knife.

              - Place the finished ravioli on a floured baking sheet to prevent sticking.

                Cook the Ravioli:

                  - In a large pot of salted boiling water, add the ravioli and gently stir. Cook for 3-4 minutes if fresh, or 5-6 minutes if frozen, or until they float to the surface. Remove with a slotted spoon and drain.

                    Prepare the Zesty Lemon Butter Sauce:

                      - In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.

                        - Add the red pepper flakes (if using) and lemon juice. Stir and let the sauce simmer for 2-3 minutes. Season with salt and pepper to taste.

                          Combine and Serve:

                            - Gently toss the cooked ravioli in the lemon butter sauce until well coated.

                              - Plate the ravioli and sprinkle with additional fresh parsley. Serve immediately, garnished with extra lemon zest if desired.
