4 large russet potatoes, scrubbed and quartered

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded sharp cheddar cheese

1/2 cup crispy bacon bits (can substitute with vegetarian bacon)

1/2 cup sour cream or Greek yogurt

1/4 cup chopped green onions

1/4 cup pickled jalapeños (optional for spice)

Instructions
 

Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.

    In a large bowl, combine the quartered potatoes, olive oil, garlic powder, smoked paprika, salt, and pepper. Toss until the potatoes are evenly coated.

      Spread the seasoned potatoes in a single layer on the prepared baking sheet.

        Roast the potatoes in the preheated oven for about 30-35 minutes, flipping them halfway through, until they are golden brown and crispy on the edges.

          Once the potatoes are done, remove them from the oven and immediately sprinkle the shredded cheddar cheese and crispy bacon bits over the top.

            Return the baking sheet to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

              To serve, drizzle the sour cream or Greek yogurt over the loaded potatoes and sprinkle with chopped green onions and pickled jalapeños if desired. Enjoy!
