Ingredients
  

1 pound ground beef

1 packet taco seasoning

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chiles

1 bag (12 oz) tortilla chips

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 medium onion, diced

1 small jalapeño, diced (optional for heat)

1 cup sour cream

1 cup salsa

1/2 cup sliced black olives

1/4 cup chopped fresh cilantro for garnish

1 avocado, diced for topping

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, brown the ground beef over medium heat. Add diced onions and jalapeño (if using) and cook until the onions are translucent, about 5 minutes.

      Stir in the taco seasoning and diced tomatoes with green chiles. Cook for an additional 2 minutes until everything is well combined, then remove from heat.

        In a large casserole dish, spread half of the tortilla chips evenly at the bottom.

          Pour half of the beef mixture over the chips, then sprinkle with half of the black beans.

            Sprinkle 1 cup of cheddar and 1/2 cup of Monterey Jack cheese over the layer.

              Repeat the layers with the remaining tortilla chips, beef mixture, black beans, and cheeses.

                Pour salsa evenly over the top layer and dollop sour cream in spoonfuls across the surface.

                  Cover the casserole with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                    Once out of the oven, let it cool for a few minutes. Top with sliced black olives, diced avocado, and fresh cilantro before serving.
