4 large russet potatoes, peeled and diced

1 cup sour cream

1/2 cup cream cheese, softened

1/2 cup milk

1 cup shredded cheddar cheese, plus extra for topping

1/2 cup cooked bacon, crumbled

1/4 cup green onions, sliced

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 cup breadcrumbs (optional for topping)

1 tablespoon olive oil (if using breadcrumbs)

Instructions
 

Boil the Potatoes: Place diced potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook until fork-tender, about 15-20 minutes. Drain and return to the pot.

    Mash the Potatoes: Add sour cream, cream cheese, milk, garlic powder, onion powder, salt, and pepper to the drained potatoes. Mash until creamy and mixed well.

      Mix in Add-Ins: Fold in 1 cup of shredded cheddar cheese, crumbled bacon, and half of the green onions into the mashed potatoes. Adjust seasoning as needed.

        Prepare the Casserole Dish: Preheat your oven to 350°F (175°C). Grease a 9x13-inch casserole dish with non-stick spray or butter.

          Assemble the Casserole: Spread the loaded mashed potatoes evenly in the prepared dish. Top with additional shredded cheddar cheese.

            Optional Breadcrumb Topping: If using, mix breadcrumbs with olive oil and sprinkle over the top of the casserole for added crunch.

              Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until heated through and the cheese is bubbly and slightly golden.
