1 cup romaine lettuce, chopped

1 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/4 cup red onion, finely chopped

1/4 cup black olives, sliced

1/4 cup pepperoncini, sliced

1/2 cup salami, diced

1/2 cup provolone cheese, diced

1/4 cup fresh basil, chopped

1 tsp dried oregano

1/4 cup red wine vinegar

1/4 cup olive oil

Salt and pepper to taste

4 ciabatta rolls, split

1/2 cup pesto (for spreading)

Instructions
 

In a large mixing bowl, combine the romaine lettuce, cherry tomatoes, cucumber, red onion, black olives, pepperoncini, salami, provolone cheese, and fresh basil.

    In a separate small bowl, whisk together the red wine vinegar, olive oil, dried oregano, salt, and pepper until well blended.

      Pour the dressing over the salad mixture and toss until everything is evenly coated.

        Cut the ciabatta rolls in half and spread a generous layer of pesto on the inside of each roll.

          Pile the loaded Italian chopped salad mixture onto the bottom half of each ciabatta roll, ensuring an even distribution.

            Place the top half of the roll over the loaded salad and press down gently.

              Serve immediately, or wrap in parchment paper for later to keep the sandwich fresh and intact.
