1 lb ground beef

1 cup cooked rice (white or brown)

1 cup black beans, drained and rinsed

1 cup corn (frozen or canned)

1 medium onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or homemade)

1 cup shredded cheese (cheddar or Mexican blend)

1 large avocado, diced

1 cup salsa (your favorite kind)

1 cup sour cream

4 large flour tortillas

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Beef: In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat if necessary.

    Flavor the Meat: Add the diced onion and minced garlic to the skillet, cooking until the onion is translucent, about 3-4 minutes. Stir in the taco seasoning, mixing well to coat the meat and onions.

      Add Veggies: Add the black beans and corn to the skillet. Stir until everything is well combined and heated through, about 2-3 minutes. Remove from heat.

        Prepare the Rice: In a large bowl, combine the cooked rice with half of the shredded cheese and a couple of spoonfuls of salsa. Mix well.

          Assemble the Burritos: Lay a large flour tortilla on a clean surface. Spoon a generous amount of the rice mixture in the middle, followed by the beef mixture, diced avocado, and a spoonful of salsa. Top with more shredded cheese.
