4 large russet potatoes

8 slices of thick-cut bacon

2 cups shredded sharp cheddar cheese

1 cup sour cream

1/2 cup green onions, chopped

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Olive oil for drizzling

Prepare the Potatoes: Preheat your oven to 425°F (220°C). Scrub the russet potatoes thoroughly and poke several holes in each potato with a fork. Rub them with olive oil and season with salt and pepper.

    Bake the Potatoes: Place the potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes, or until the skin is crispy and a fork easily pierces the flesh.

      Cook the Bacon: While the potatoes are baking, cook the bacon in a skillet over medium heat until crisp. Transfer to a paper towel-lined plate to drain excess grease, then chop into small pieces.

        Make the Cheese Sauce: In a small saucepan over medium-low heat, melt 1 tablespoon of butter (optional) and mix in the shredded cheddar cheese, garlic powder, smoked paprika, and a splash of milk for creaminess.
