1 cup warm water (110°F to 115°F)

2 ¼ teaspoons active dry yeast (1 packet)

2 tablespoons sugar

3 ½ cups all-purpose flour

2 teaspoons salt

3 tablespoons olive oil

1 cup shredded mozzarella cheese

½ cup pepperoni slices (or any toppings of your choice)

1 egg (for egg wash)

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Marinara sauce (for dipping)

Activate the Yeast: In a medium bowl, combine warm water, yeast, and sugar. Let it sit for about 5-10 minutes or until it becomes frothy.

    Make the Dough: In a large mixing bowl, combine flour and salt. Add the activated yeast mixture and olive oil. Stir until a dough forms.

      Knead the Dough: Transfer the dough to a floured surface and knead for about 8-10 minutes until the dough is smooth and elastic.

        First Rise: Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

          Prepare the Filling: In a small bowl, mix the mozzarella cheese, pepperoni (or chosen toppings), garlic powder, and Italian seasoning.

            Shape the Crazy Puffs: Preheat the oven to 425°F (220°C). Punch down the risen dough and divide it into 12 equal pieces. Roll each piece into a ball. Flatten each ball into a disc, about 4 inches in diameter.

              Stuff the Puffs: Place a tablespoon of the filling mixture in the center of each disc. Fold the edges over to seal and shape them into puffs. Pinch the edges to ensure they are well sealed.

                Prepare for Baking: Place the stuffed puffs on a greased baking sheet. Beat the egg and brush it over the tops of the puffs for a shiny finish.

                  Bake: Bake in the preheated oven for 15-20 minutes, or until golden brown and puffed up.
