1 cup orzo pasta

1 bunch asparagus, trimmed and cut into 1-inch pieces

2 tablespoons olive oil

2 cloves garlic, minced

1 cup vegetable broth (or chicken broth)

Zest of 1 lemon

Juice of 1 lemon

1 cup grated Parmesan cheese

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Orzo: In a large pot of salted boiling water, cook the orzo according to package instructions until al dente. Drain and set aside.

    Sauté Asparagus: In a large skillet over medium heat, add the olive oil. Once hot, add the asparagus pieces and sauté for about 3-4 minutes or until they are bright green and tender-crisp. Add the minced garlic and sauté for an additional 1 minute until fragrant.

      Combine Ingredients: Pour the vegetable broth into the skillet with the asparagus, bringing it to a gentle simmer. Add the cooked orzo, lemon zest, lemon juice, and half of the Parmesan cheese. Stir well to combine.

        Season: Taste and season with salt and black pepper as needed, allowing the flavors to meld for an additional 2-3 minutes over low heat.
