1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

1 bell pepper (red or yellow), sliced

1 cup zucchini, sliced

1 cup cherry tomatoes, halved

1 teaspoon paprika

Salt and pepper to taste

Juice and zest of 1 lemon

1 tablespoon fresh parsley, chopped

1 teaspoon dried oregano

Optional: lemon wedges for serving

Prep the Shrimp: In a medium bowl, combine the shrimp with salt, pepper, paprika, lemon juice, and lemon zest. Toss until evenly coated. Let marinate for about 10-15 minutes.

    Heat the Skillet: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant.

      Cook the Veggies: Add the sliced bell pepper and zucchini to the skillet, cooking for about 3-4 minutes until they begin to soften. Then, add the cherry tomatoes and continue to cook for another 2-3 minutes until all vegetables are tender.

        Add the Shrimp: Push the veggies to the side of the skillet and add the marinated shrimp. Cook for about 2-3 minutes on each side, until the shrimp are pink and opaque.

          Combine: Mix the shrimp with the vegetables in the skillet. Sprinkle with dried oregano and fresh parsley, tossing everything together.

            Serve: Remove from heat and serve warm. If desired, garnish with additional lemon wedges for squeezing over the dish.
