1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¾ cup granulated sugar

16 oz cream cheese, softened

1 cup sour cream

½ cup lemon juice (freshly squeezed)

Zest of 2 lemons

3 large eggs

1 tsp vanilla extract

1 cup whipped cream (for topping)

Lemon slices and mint leaves (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C).

    Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and ¼ cup of sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust.

      Make the Cheesecake Filling: In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy. Gradually add in ½ cup of sugar and continue to beat until well combined.

        Add Remaining Ingredients: Mix in the sour cream, lemon juice, lemon zest, eggs, and vanilla extract. Beat until the mixture is smooth and creamy without lumps.

          Pour Filling into Crust: Carefully pour the cheesecake filling over the prepared crust in the springform pan. Smooth the top with a spatula.

            Bake: Place the cheesecake in the oven and bake for about 55–60 minutes or until the edges are set, and the center slightly jiggles (it will firm up as it cools).

              Cool and Chill: Once baked, turn off the oven and crack the door. Let the cheesecake cool in the oven for about an hour. Then, refrigerate for at least 4 hours, preferably overnight.
