12 fresh jalapeños

2 cups leftover mac and cheese

1 cup shredded cheddar cheese

½ cup cream cheese, softened

¼ cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

½ cup panko breadcrumbs (optional for crunch)

Cooking oil spray

Prepare the Jalapeños: Preheat your oven to 375°F (190°C). Carefully slice each jalapeño in half lengthwise and remove the seeds and membranes for a milder flavor. For extra spice, leave some seeds in.

    Make the Filling: In a mixing bowl, combine the leftover mac and cheese, shredded cheddar, cream cheese, green onions, garlic powder, smoked paprika, salt, and pepper. Mix well until all ingredients are incorporated.

      Stuff the Jalapeños: Use a spoon or a piping bag to generously fill each jalapeño half with the mac and cheese mixture. If you like, sprinkle panko breadcrumbs on top of the filling for added crunch.
