Ingredients
  

1 pound ground beef or Italian sausage

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper, diced (any color)

1 (28-ounce) can crushed tomatoes

4 cups chicken or vegetable broth

2 teaspoons dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional)

8 ounces uncooked lasagna noodles, broken into pieces

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh basil, for garnish

Salt and pepper to taste

Instructions
 

In a large pot over medium heat, add the ground beef or Italian sausage. Cook until browned, breaking it apart with a spoon as it cooks. Drain excess grease, if necessary.

    Add the diced onion and bell pepper to the pot and sauté for about 5 minutes, until softened. Stir in the minced garlic and cook for another minute until fragrant.

      Pour in the crushed tomatoes, broth, oregano, basil, red pepper flakes (if using), and season with salt and pepper. Bring the mixture to a simmer.

        Once simmering, add the broken lasagna noodles and cook until al dente, about 10-12 minutes, stirring occasionally to prevent sticking.

          In a separate bowl, combine the ricotta, half of the mozzarella, and half of the Parmesan cheese. Mix well to create a creamy cheese mixture.

            Once the lasagna noodles are cooked, swirl the ricotta mixture into the soup until everything is nicely blended.

              Serve the soup hot, garnished with remaining mozzarella, Parmesan, and fresh basil leaves.
