1 pound beef sirloin, thinly sliced against the grain

3 tablespoons vegetable oil

2 cloves garlic, minced

1-inch piece ginger, minced

1 cup bell peppers (red and green), diced

1/2 cup unsalted roasted peanuts

3 green onions, chopped (white and green parts separated)

1/4 cup soy sauce

2 tablespoons rice vinegar

2 tablespoons hoisin sauce

1 tablespoon sesame oil

1 tablespoon cornstarch

1 tablespoon sugar

1 teaspoon Sichuan peppercorns

2-3 dried red chili peppers (adjust for spice preference)

Marinate the Beef: In a medium bowl, combine the sliced beef with 1 tablespoon of soy sauce, 1 tablespoon of cornstarch, and a pinch of salt. Let it marinate for at least 15 minutes.

    Prepare the Sauce: In a small bowl, whisk together the remaining soy sauce, rice vinegar, hoisin sauce, sesame oil, sugar, and Sichuan peppercorns. Set aside.

      Stir-fry the Beef: Heat 2 tablespoons of vegetable oil in a large skillet or wok over high heat. Add the marinated beef in a single layer and let it sear without stirring for about 1 minute. Then stir-fry until browned, about 2-3 more minutes. Remove the beef from the skillet and set aside.

        Cook the Aromatics: In the same skillet, add another tablespoon of oil. Add the minced garlic, ginger, and dried red chili peppers. Stir-fry for about 30 seconds until fragrant.

          Add Vegetables: Toss in the diced bell peppers and the white parts of the green onions. Stir-fry for 2-3 minutes until the vegetables are slightly tender but still crisp.

            Combine Everything: Return the beef to the skillet. Pour the prepared sauce over everything and stir to combine. Cook everything together for another 2-3 minutes until heated through.

              Garnish and Serve: Add the roasted peanuts and the green parts of the green onions. Toss gently. Serve hot over steamed rice or noodles.
