Ingredients

1 lb ground beef (80/20 blend)

4 cloves garlic, minced

1 inch ginger, grated

1/4 cup soy sauce (low sodium)

2 tablespoons brown sugar

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 tablespoon gochujang (Korean chili paste)

1 teaspoon cornstarch

2 green onions, sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

Steamed rice (for serving)

Optional: Kimchi (for serving)

Instructions

Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes. Drain any excess fat.

Add Aromatics: Stir in the minced garlic and grated ginger. Sauté for about 1-2 minutes, until fragrant and the garlic is lightly golden.

Make the Sauce: In a small bowl, whisk together the soy sauce, brown sugar, sesame oil, rice vinegar, gochujang, and cornstarch. Pour this mixture over the cooked beef in the skillet.

Simmer: Stir to combine, ensuring the beef is well coated in the sauce. Let it simmer for another 3-5 minutes, stirring occasionally, until the sauce has thickened slightly.

Serve: Prepare bowls of steamed rice. Spoon the Korean ground beef over the rice and garnish with sliced green onions and sesame seeds. Serve hot with a side of kimchi if desired.
